What’s New This Spring at Wedges

Lighter days, lighter bites. Here is what we have been adding to the menu as the weather warms up.

As the clocks go forward and the days stretch out, our menu shifts with the season. We have been working on some new additions that we think you are going to love, alongside the favourites that are not going anywhere. Spring is a genuinely exciting time in the bakery — the first British produce of the year starts arriving, and lighter, fresher flavours find their way onto the counter.

New on the Menu

Spring is the time for lighter flavours and fresher ingredients. Here is what we have been adding:

  • Coronation chicken sandwich — a classic British filling with mango chutney, mild spice, and crisp lettuce on fresh bread
  • Asparagus and goat’s cheese quiche — seasonal British asparagus with creamy goat’s cheese in our handmade pastry
  • Lemon drizzle cake — sharp, sweet, and properly moist. A spring staple.
  • Iced coffee — now available as the weather warms up, made with our regular espresso over ice

We try to cook with the seasons wherever we can. British asparagus has one of the shortest growing windows of any vegetable, usually just a few weeks from late April, so our asparagus quiche is a true seasonal treat while it lasts. The lemon drizzle, meanwhile, is the cake we reach for the moment the sun comes out — sharp, light, and made fresh in our own kitchen.

Spring Bakes and Celebrations

Spring is full of occasions, and the bakery fills up accordingly. Mother’s Day brings a run on our celebration cakes and afternoon-tea treats, and as Easter approaches the ovens turn out trays of spiced hot cross buns, simnel cake, and chocolate goodies. If you are planning ahead for a gathering, it is always worth ordering celebration cakes and platters a few days in advance so we can make exactly what you need.

The Classics Stay

Do not worry — the giant sausage rolls, the bacon sandwiches, and the scotch eggs are not going anywhere. They are year-round favourites for a reason. We are just adding to the lineup, not replacing anything, so your usual order is always safe with us.

Outdoor Seating

With the warmer weather, our outdoor seating at both locations comes into its own. At Hockley Heath, you can sit out the front and watch the world go by on School Road. At Dovehouse, the pavement tables are perfect for a coffee in the sunshine. Both spots are dog-friendly, so your four-legged companion is welcome to join you while you enjoy the first warm days of the year.
